    Guilty Pleasures: Cucumber Jalapeño Margarita

    1.25 oz Cuervo Silver Tequila
    Fresh Lime Juice
    Simple Syrup
    2 Fresh Cucumber Slices
    5 Leaves Fresh Cilantro
    Jalapenos to taste

    Salt rim of glass. Muddle cucumber, jalapeño, cilantro, half ice and lime juice in glass. Add simple syrup, Tequila and rest of ice. And pour back in glass. Garnish with lime or cucumber wheel and straw.

    • ½ oz Grenadine
    • ½ oz Peach Schnapps or Vodka
    • ½ oz Blue Curacao

    Slowly pour each ingredient into a shot glass to create a layered effect. Add them in the order listed above.

    Pecan Pie Martini

    Garnish
    1/2 cup turbinado sugar
    1/2 ounce praline pecan liqueur
    2 pecan halves

    Pour the praline pecan liqueur into a shallow plate. Dip the rims of the martini glasses into the the plate with the pecan liqueur then dip them into the plate with the turbinado sugar. Place one pecan half in each of the martini glasses.

    Martini
    2 ounces Praline pecan liqueur
    1.5 ounces caramel cream liqueur
    1.5 ounces bourbon
    .5 ounce Torani caramel syrup
    1 ounce heavy cream

    Fill a cocktail shaker with ice cubes. Add all liquid ingredients into the cocktail shaker, and shake for 20-30 seconds. Pour into prepared martini glasses.

    INGREDIENTS
    The juice of 6 lemons
    4 Tbsp. sugar
    6 fresh mint leaves
    4 shots of vodka
    Ice in shaker
    A sugar-rimmed martini glass

    Mix lemon juice, sugar and vodka in a martini shaker filled with ice. Shake well and pour into sugar-rimmed martini glass. Garnish with mint. Serves 2

    Gingerbread Cookie People

    MIX
    Sift 3 1/2 C flour
    1 tsp baking soda
    1 tsp salt
    1 TBSP ground ginger
    2 tsp cinnamon
    1/4 tsp cloves
    1/4 tsp allspice

    In another bowl, MIX
    6 TBSP melted butter
    1 TBSP melted shortening
    2/3 C light brown sugar
    3/4 C molasses
    Beat in 1 egg with a mixer.
    Beat in the flour mixture in two additions.
    Divide the dough in half, wrap in plastic and pat to ½ inch thick.
    Chill 2 hours.

    Preheat oven to 350.
    On a floured surface, roll out each piece of dough to ¼ inch thick, dusting with flour.
    Cut into 3-to-5 inch Gingerbread People and arrange 1 inch apart on parchment paper-lined cookie sheets. Brush off excess flour and chill 15 min.

    BAKE until cookies are golden brown around edges, 10 to 12 min.

    ROYAL ICING
    Sift 2 TBSP meringue powder (found in baking aisle or at craft’s store-Michael’s) and 1 LB confectioner’s sugar into a large bowl. Beat in 6 TBSP water with a mixer until glossy with soft peaks.
    Tint with food coloring, if desired.

    Peppermint Candytini

    2 oz of Absolut Peppar vodka
    1 oz of white Creme de Menthe
    1.5 oz of Godiva White Chocolate liqueur
    1 oz of Rumple Minze peppermint liqueur
    2 small peppermint patty candies
    Peppermint twist martini glass rim sugar

    The mix
    Pour the ingredients except the Creme de Menthe into a shaker 3/4 full of cracked ice.
    Shake vigorously for a full minute.
    Rim your martini glasses with peppermint twist sugar
    Strain your elixir into the glasses
    Top each glass with 1/2 of the Creme de Menthe.
    Garnish each glass with a peppermint candy.

    Gingerbread Martini

    1.7 oz belvedere vodka
    .5 oz Navan vanilla cognac
    .5 oz Gingerbread syrup
    4 squeezes of lemon

    Mix all ingredients in a shaker with ice shake well and strain into a martini glass
    Glass is rimmed with crushed gingerbread cookies (like salt on a margarita glass)

    White Chocolate Martini

    2 oz Vodka
    1 1/2 oz white Crème de Cacao
    After Eight mint stick or Hershey’s Kiss
    Powdered cocoa for rimming

    Wet the rim of a cocktail glass and dip into cocoa powder. Add ingredients to cocktail shaker filled with ice. Shake then strain into the cocktail glass. Garnish with an After Eight mint stick or Hershey’s Kiss.

    Winter White Cosmopolitan

    1 1/2 oz Stolichnaya Cranberry Vodka
    1/2 oz Cointreau
    1 oz Cranberry Juice
    1 oz Lime Juice

    Combine ingredients over ice in a shaker tin. Shake and strain into chilled martini glass.
    Float 3 or 4 frozen cranberries on top for garnish.

    Happy Chanukah! Potato Latke Recipe

    No measurements required
    A little bit of this, a little bit of that!

    Idaho Potatoes (many depending on your group)
    Eggs
    White Onions
    Flour
    Salt
    Pepper
    Sour Cream
    Apple Sauce

    *Heat up a large skillet and put approx. an inch of oil and bring to a boil.
    *Chopped onions and potatoes so they are small enough to go in the Cuisinart.
    *Mix in Cuisinart the potato and onion and 1 egg and get it to the consistency you like.
    *Pour in a large mixing bowl and add salt and pepper to taste.
    *Repeat the step above until you’ve made enough to feed your guests. (most likely they will be in the kitchen eating them as you make them!)
    *Place in flyer and check underside after 2-3 min
    *Flip and cook other side until nice and crispy
    *Place on cookie sheet lined with paper towels to soak up the oil and salt and pepper to taste.
    *Make sure you have a small bowl of apple sauce and sour cream ready to go!

    1 Splash of Blue Curacao
    1 Splash of Chambord Raspberry Liqueur
    Blue sugar for rim

    *Rim glass with blue sugar
    *Shake over ice and strain into a martini glass.

    “Pumpkin Cheesecake With Gingersnap Crust”

    Ingredients:
    2-1/2 cups ground gingersnaps
    1 cup butter, melted
    1-1/2 cups pumpkin
    1 tsp. cinnamon
    1 tsp. ground nutmeg
    1/2 tsp. ginger
    1-1/2 lbs. cream cheese
    1/2 Tbsp. vanilla
    1 cup sugar
    4 eggs
    2 Tbsp. sour cream
    1/4 cup half-and-half
    Instructions:
    In a medium-sized bowl, combine butter and gingersnaps. Press mixture into a greased spring form pan. Place pan in a 350-degree oven for 5 minutes.

    In a large bowl, combine cream cheese, sugar, vanilla, sour cream and half-and-half. Using an electric mixer, beat mixture until light and fluffy. One at a time, beat eggs into the mixture. Add remaining ingredients; beat until well blended. Pour mixture into the spring form pan until the filling comes 1/4 inch from the top of the pan. Wrap outside of the spring form pan twice with aluminum foil. Place the pan in another pan that has been partially filled with water. Place the cheesecake in the water bath in a 300-degree oven for 1 hour. Remove pan from the oven. Remove spring form pan from the water bath. Let cheesecake cool before removing it from the spring form pan.

    Pumpkin Martini

    2oz. Pinnacle Whipped Vodka
    1oz. Pumpkin Spice Monin (Monin is a non-alcohol flavoring agent)
    Splash
    1/2 half & half cream.

    Shake all ingredients. Strain into martini glass. Rim glass with cinnamon. It’s awesome!

    MOJITO

    Supposedly this comes from Jimmy Buffett’s road manager but I cannot verify but it’s delicious!

    tall glass or highball glass
    martini shaker metal
    large pestle or muddler
    fresh mint
    tonic water
    several limes (4 quarters per drink)
    light or clear rum (no dark rum)
    granulated sugar (white)
    ice

    * cut limes in half and in half again
    * you will use five lime wedges for each drink
    * rinse and dry limes and fresh mint
    * add five lime wedges and few sprigs of mint to martini shaker
    * use metal shaker
    * add three tablespoons of sugar
    * crush ingredients with muddler for about 3 minutes
    * add rum– one and half to two ounces of rum. it’s about a three second easy pour
    * add ice cubes
    * cover and shake
    * pour into glass.
    * add small amount of tonic water
    * stir
    * add mint garnish and enjoy
